Elderberry (Sambucus nigra) is also called the sacred tree, because it has long been a home guardian, a warder of evil and a miracle cure in folk medicine and also in cooking. Black elderberry flowers contain flavonoids (quercetin, rutin), glycoside sambunigrin, essential oil, choline, phenolcarboxylic acids, pectin substances, organic acids, mucilage and tannins. The fruits contain vitamin C, carotene, flavonoids, tannins, sugars and organic acids.

Latvians also call elderberry, which is much more common in Kurzeme and Zemgale, Plieder and use it more for health enhancement, because there is no ailment that its dried flowers, berries, leaves or bark would not help with. However, in Old Europe, they are more enthusiastic about elderberry flower syrup, which is added to water (even carbonated - it makes a great lemonade!), juices and desserts.
